the small Brazilian Fazenda of Ipe Amarelo, this amazing pulped natural
bourbon coffee has us reeling with its light, fermenty sweetness.
The gentle acidity opens up to a tea-like flavor – leaving notes of
sweet almond, and fragrant rosewater. Cupping
Notes: Intense rose-like dry aroma. Very elegant. Almond
and honey flavor turning to sweetened tea with strong hints of sweet
lemon as it cools. Long, pleasant aftertaste.
Roasting Notes: An expensive
coffee like this should be light roasted. Medium roast brings out
chocolate malt flavors and is best suited for espresso roasting.
Roast it dark and the elegant flavors evaporate leaving an unsweetened
caramel flavor. If possible, be careful about applying too much
heat throughout the roast as scorching and tipping will occur because
these beans are relatively soft.
