El Salvador "Diamante"

Diamante is SHG (strictly high-grown) 100% Bourbon Coffee, sourced primarily from the highlands from the Sierra Apaneca Ilamatepec region which is surrounded by numerous volcanoes.

Cupping Notes: moderate -to-intense dry aroma, becoming intense during the wet and the break. , Medium body and well balanced orange-lemon flavors that finish clean with strong hints of berries and currant. Orange and red grapefruit appearing as the cup cools. Very sweet, long lingering aftertaste. For drip or French press brewing, do not up the ratio of coffee to water beyond basic Gold Cup standards, or it will ruin the already intense flavor.

Roasting Notes: light to medium roast to bring out the citrus. Being an SHG Bourbon, these beans hold up well to darker roasts with malt and cedar becoming prominent after 20 seconds or so into 2nd crack.
