El Salvador La Florida Pipil is located in the Apaneca-Ilamatepec Mountain Range. La Florida Pipil became the first certified organic coffee farm in El Salvador in 1993.
This Strictly Hard Bean, Bourbon variety is grown at an altitude of around 4,200 ft. It is sweet, medium bodied, bright in the cup, and very clean tasting. The beans are a bit on the small side (16 screen), which is a little unusual for a coffee grown at such a high altitude. Our recommended roast level is City to Light Full City. It holds up well to a darker roast, but loses its acidic character quickly when roasted more than around 15 seconds into second crack.
This coffee works well as a high note component to a lighter roast style espresso blend using a lower grown bean such as a Brazil as a base. The Pipil should be roasted separate and taken a tad bit darker than the base component, otherwise it may be a little too tangy for most palates.
