Mexican Oaxaca Cafe Pluma Tres OrosPronounced "Wah-Hah-kuh". This high-grown (HG) coffee is a delicate, mild flavored cup that is quite a bit different than coffees from the Chiapas region. The Tres Oros is a brand, which is not a specific farm or estate, but rather a conglomerate of farms in the Oaxaca highlands that are milled at the same location and sell under the Tres Oros name. To bring out the delicate flavors, it is best roasted at medium-light, or right between City and Full City. This particular lot has a sort of "wood" aroma, with a mild, bittersweet chocolaty taste. Good for developing "mid-to-high-notes" in an espresso blend. If you like blending, then try substituting this Oaxaca in place of Colombian. The result will be a more lively cup (in most cases).
