Sumatra Mandheling - Rainforest Alliance

Rainforest-Alliance farm certified coffees are an attempt to preserve the ecosystem essentially by maintaining a mix of the natural forest canopy and coffee trees. This helps prevent soil erosion, nutrient depletion, and provides adequate nesting areas for all types of birds. To achieve RA certification, farms must undergoe periodic audits from the certifying agency.

Cupping Notes: Along with typical syrupy body that are typical of Sumatrans, there are distinct hints of cherry in this cup when roasted relatively light (city+). Roasted darker and forest-floor notes become more pronounced, especially as the cup cools. This is a solid, traditional type of Sumatran with the earthiness and rustic flavors Indonesian coffees are known for.

Roasting Notes:
Most good quality Sumatrans roast darker than they appear to be. 15-30 seconds or so into 2nd crack is more than enough, unless one really prefers a darker roast. Unevenness in finished roast color is normal. The intense flavor of this coffee will shine right through frothed milk, making it a good choice for making lattes with.
