Ethiopian Yirgacheffe (FTO)

This is a washed, FTO (Fair Trade Organization) certified coffee. It also comes to us sealed grain-pro burlap lined bags. Grain-pro packaging is being utilized more and more on exceptional coffees for the purpose of maintaining proper bean moisture content and to prevent baggy flavors that eventually develops in green coffee after it has been in contact long enough with it's surrounding jute bag.

Roasting Notes: This coffee is too nice to roast dark. You can, but the sweetness will quickly turn into malt and the uniqueness of the coffee will simply evaporate. It is a fairly dense bean, so roast it similar to a high-grown Central American and slow the final temperature curve way down to prevent tipping (for roaster machines that are capable of slowing down the temp). If it smells like skunk one hour after roasting, you've scorched the tips at the end of the roast cycle.

Cupping Notes: Intense floral notes. Jasmine, coriander, orange peel very well balanced together. Very nice mouth feel and a long, lingering, sweet lemony aftertaste. Long, pleasant aftertaste. Very clean cup. Holds its own as a single origin espresso. Excellent for other brewing methods such as Hario or French Press.
